At My Kitchen Table: Raw Raspberry Porridge
I have never been enamoured by the gloopy, sticky texture of porridge but I have always been envious of people who can enjoy large bowlfuls and benefit from those energising little oats every day. The flavour from oats and even the smell of porridge has always enticed me but the texture was just something I struggled a little with.
And so was born my raw raspberry porridge. This recipe is sweetened by the honey and fruit, with the toasted nuts and blueberries give it a lovely bit of crunch alongside the smooth but not gloopy oat and yogurt combo.
You'll need:
1/2 cup of oats
4 tablespoons of real Greek yogurt
1 tablespoon honey
A handful of raspberries
Toasted pumpkin & sunflower seeds
Chia seeds
Blueberries

Method:
1. Crush the raspberries with a fork until they form a paste.
2. Combine the yogurt, crushed raspberry, oats and honey in a bowl. Add a little extra yogurt if the mixture is too dry for your liking.
3. Sprinkle the toasted seeds, chia seeds and blueberries on top and add a small drizzle of honey.
4. Dig in and enjoy!
